The 3950x has 39247 passmark multithread points. The 5950x has 46130 passmark multithread points, which is 17% more. So I think you can expect a speed improvement of 15-20% when you compare the 5950x to the 3950x. personally I would get a used older gen-one. If you compare the speed per euro or dollar, the new onces don't makes sense. They are probably 15-20% faster. The 3950x is 668 euro in The Netherlands. For comparison, the 3900x is 445 euro (33% cheaper and only 16% slower). The 5950x is 898 euro, which is 34% more expensive and definitely nowhere near 34% faster.

I have just updated the Graphic card, switching from GTX 1030 to a TitanX.

The tests results are indeed quite better under HF.
Now the "100 files" performance test gives: 3.63 seconds (578.71 Mpixel/s) with transfer speed 11789.21MB/s.
In fine, this is confirmed: the graphic card does a huge difference.

Indeed it does. It just has to be relatively fast before it starts to take over the benchmark. Mine helps only a little. If maximum speed is required, that is achieved by investing in the graphics card.
