Spikelet of Danthonia spicata (aka poverty grass).
The term spikelet, in the case of grasses, refers to the fundamental unit of the inflorescence: typically a discrete group of flowers (florets) subtended by a pair of glumes. Note that the pincer-like glumes in this case are longer than the spikelet itself. Missouri, USA.

Those anthers move with the slightest air movement or change in humidity. How did you manage to keep them motionless?

Movement can definitely be a problem. I try to mitigate it by allowing specimens to acclimate to the indoor environment and then photographing them in a three-sided “studio” which reduces drafts. I also turn off the HVAC, stand very still, and hold my breath as much a possible while shooting.
